If you want to take advantage of the manual coin selection feature, you need to download the latest desktop version of Blockstream Green.
At the time of writing, this feature has been introduced in our desktop app but support for our mobile apps is on the way. Now let's see how to use this feature to better organize your coins.
Desktop

First, login to your wallet and open the send dialog by clicking the Send button in the top right of the main application window.

Now that the send dialog is open, you can paste or scan the recipient address in the address field. Once the address is entered, it's time to select which coins you want to spend. Click Advanced Options section on the bottom, and select the Manual coin selection option.

Now you may select which coins you want to send from the list. You can also apply some basic filtering for dust coins (small amounts) or coins that are still protected by the legacy GreenAddress 2of2 script (p2swh).

Now that you are done selecting coins, press the Confirm Coin Selection button to go back to the send dialog. The Coins section is now showing the total amount of coins you selected.

Once you have selected a subset of your coins to spend in this transaction, you can specify an amount to send. If you specify an amount that is higher than the total amount of coins selected, you will get an error. If the amount is instead lower, the transaction will have a change output.
Tip: In case you want to move just one specific coin, you can select it in the coin list and toggle the Send all option in the send dialog. This will generate a transaction with just 1 input and 1 output, spending a single coin entirely, without generating change outputs.
The rest of the steps are the usual ones when sending coins from Green. You will have a chance to review the details of the transaction, add a note for yourself and provide a two-factor authentication code in case you enabled 2FA.
